Homemade Sun-dried Tomatoes in Olive Oil

Remember this HUGE box of Roma tomatoes that I got for $10??? 


Well, my Freezer Tomato Sauce took care of a big chunk of those tomatoes. But I still had a good amount left that I didn’t want to waste.


I love Sun-dried Tomatoes. They are so yummy and perfect in so many recipes. So I decided to try to make them myself. 


It was SOOOOOOO easy! Really. Can you have an easier recipe? You simply line a large baking sheet with foil and spray with non-stick cooking spray. Slice your tomatoes in half and lay them cut side up. Sprinkle with a bit of salt. Bake at 275˚ for 4 hours and that’s pretty much it!


These little babies are just concentrated flavor of amazing yumminess!


Scoop them into a jar and pour olive oil over them to keep them nice and juicy and safe in your fridge. Use them within 2 weeks or freeze them in air-tight bags.


There are so many recipes to choose from to use these babies for. My favorite is Chicken with Sun-dried Tomatoes in Cream Sauce! So yummy!
