Chocolate Chip Pancake Bites

Mornings can sometimes be, well, a bit busy getting the oldest two boys out the door for school and trying to drink my coffee before it get cold! I try very hard to have good breakfast options for the kids, but making a full bacon and egg breakfast (which they often request) is not realistic. The kids love my freezer Sausage Pancake Bites, but when I ran out of sausage…I got creative. And now we have Chocolate Chip Pancake Bites which are  now everyone’s FAVORITE!!!

I use my mini muffin pan to make these pancake bites. The size is perfect for little hands and mouths. They also freeze extremely well. I love the convenience of homemade freezer foods that are ready in minutes when I need them!

This is a really easy recipe. It is a perfect recipe to get the kids involved and cooking with you in the kitchen. My Jimmy Wray is determined to learn how to cook right now. He may only be five years old, but he knows that the best life skill he can learn is how to make good food for himself! He is also my child who is hungry TEN minutes after DINNER! (Crazy Kid!)

  1. 1 box (28 oz) Pancake Mix (I use the simple add water mix)
  2. 2 tbsp Vegetable Oil
  3. 2 tsp Vanilla
  4. 1 cup Chocolate Chips
  1. Mix entire box of pancake mix according to box directions.
  2. Add vegetable oil and vanilla.
  3. Scoop into greased mini muffin pans
  4. Sprinkle 4-5 chocolate chips into each muffin cup
  5. Bake at 350˚ for 9-11 minutes or until toothpick inserted in comes out clean
  1. Freeze in a zip lock bag. To re-heat, place on microwave safe plate and microwave on high for 1 minute

Chocolate Chip Blondies

There are some desserts you just grow up on. You know the ones that trigger all kinds of memories just by the smell when you walk into the kitchen. I can remember my grandmas house smelling of gingersnaps and spices. I am not sure I can even tell you which spices, but it was homey and warm, just like a grandma’s house should be. In my house up the dessert and “smell” we grew up on were these amazing Chocolate Chip Blondies (Brownies). I seem to remember them baking ALL the time. They are the best brownies!!!

Dark Chocolate Zucchini Bread

It’s that time of year again…. the air is starting to get crisp and everyone is talking about pumpkin spice lattes and apple pies. And I must admit that I have even thought about how in the world I am going to fit everyone at our dining room table for Thanksgiving Dinner in just a few months!

Things have been settling in our home and I am happy we are back to routines. The oldest two have started 2nd grade and Kindergarten. They are in a new school and we are so happy with their new teachers and the learning environment which the staff has worked hard to create. There are still FOUR kids at home during the day… (whew!) So, I am working on keeping them busy in the morning and doing a little celebration if I can get all four to take a nap at the same time in the afternoon!!! (YAY!)

This time of year I get the urge to bake! And bake and bake and BAKE! It’s finally not too hot to have the oven on. Of course, on the top of my list of favorite things to bake is BREAD! Homemade bread is just soooooooo good! If you think making homemade bread is too difficult you are so wrong. Start with an easy quick bread like this one. No kneading or waiting for it to “double in size.” This Dark Chocolate Zucchini bread is a cross between a cake and a bread. I love that it is stuffed full of veggies!
