I am excited about all things Apple this month! I want to take advantage of all the lush bushels of apples piled high in the produce section! My boys love them too. I try to keep a bunch of small apples available for their little hands and mouth to snack on as much as they want. Although, I often find little teeth marks and half eaten apples in our apple basket. (Oh, Boy! Hehehehe)
Inspired to by Apples, this Spice Cake is aaahhhh-maaaa-zzzziiiinnnggg!!!! Really, moist and is very much a Cafe-like treat! (Except I don’t have to pay $4 for one slice! I can eat it all!!! ~ or not…LOL)
Here is how you make it.
CARAMEL APPLE SPICE CAKE
Begin by sifting together all of the dry ingredients.
Drop some eggs into your mixing bowl.
Applesauce replaces most of the oil!
Brown sugar next.
And just a small amount of oil. And turn the mixer on for a bit.
Add some Vanilla Extract.
Adding Sour Cream to cakes is one of my favorite ways to ensure it comes out moist.
When all your wet ingredients are well blended, slowly add the dry ingredients until smooth.
Dice up a few Apples.
Dump in a small mixing bowl.
Add Brown Sugar and a bit of Salt.
Mix and layer on the bottom of your bundt pan which you have sprayed with cooking spray.
Pour cake batter evenly over apples.
Bake for 45-50 min @ 350Ëš
Grab a plate or platter and place on top. Carefully flip over.
Swoon over the caramelized apples and fragrant spices!
Cut yourself a nice big slice and enjoy!
CARAMEL APPLE SPICE CAKE
3 C. Flour
1 1/2 Tsp Baking Soda
1 1/2 Tsp Salt
1 1/2 Tsp Cinnamon
1 Tsp Nutmeg
1/2 Tsp Ginger
1/4 Tsp Cloves
1 Tsp Allspice
3 Eggs
2 C. Brown Sugar
2/3 C. Applesauce
1/2 C. Vegetable Oil
1/2 C. Sour Cream
1 C. Apples, diced
2/3 C. Brown Sugar
1/2 Tsp Salt
Sift together into a large bowl, flour, baking soda, salt, cinnamon, nutmeg, ginger, cloves, & allspice. In a separate bowl, beat eggs, 2 c. brown sugar, applesauce, & oil together. Mix in sour cream. Combine wet & dry ingredients together. Mix until smooth. In a small bowl toss apples, 2/3 c. brown sugar & salt together. Layer on the bottom of a bundt pan that has been sprayed with cooking spray. Pour cake batter over top of apples. Bake for 45-55 min. @ 350Ëš or until a toothpick inserted into cake comes out clean. Flip onto a platter. ENJOY!
