My kids are not big breakfast eaters. This is really the only meal the are picky about. Grandma introduced them to Pancakes & Sausage on a Stick and they LOVED them! However, they are not easy on the food budget. I decided to try to make something similar that I can freeze and quickly heat for a yummy breakfast. Let’s just say these Sausage Pancake Bites are a HUGE success!!!

Sausage Pancake Bites

Whip up a big batch of these bites and freeze for a quick on-the-go breakfast.
Ingredients
- 2 lbs Breakfast Sausage
- 1 box (28oz) Pancake Mix
- 2 tbsp Vegetable Oil
- 3 tbsp Maple syrup
Instructions
- Brown sausage in skillet. Allow sausage to cool. Mix entire box of pancake mix according to directions on back. Add sausage, oil & maple syrup. Scoop batter into greased mini muffin tins. Bake at 350˚ for 8-10 minutes or until cooked all the way through.
Notes
- Freeze muffins in plastic zip bag or container. Pull out desired amount of muffins and microwave for 1 minute on high. ENJOY!

just wondering, what kind of pancake mix do you use? Some call for oil and others just water. This sounds good and fast too! thanks!

My bff is coming to visit as will be in my home alone for a day before I return from vacating. I planned to make freezer food ahead for her. Issue: I don’t eat meat. I also do not have a microwave (if I can’t cook it in thr oven I don’t need to eat it). How would I heat these up in the oven without drying out the pancake? Suggestions?

You can substitute the sausage for berries!
You can also try to heat them in the oven at 350˚ for 5-8 minutes.
