I am not always a fan of chicken salads, but this Avocado Chicken Salad is Aah-Mah-Zing! LOVE IT! It’s light and healthier then most versions because it is light on Mayo. We ate it with crackers, but you can certainly make it into a sandwich!
Start with a large Avocado and slice that sucker in half!
Chop up some cooked chicken. (it can be breasts, thighs, leftovers… Whatever you got!)
Mash your avocado in a bowl with some mayo.
Toss in your chicken.
Chop up some fresh Cilantro.
Pour in a little dash of Lime Juice (This gives a nice Zing!) and add a little salt and pepper to taste.
Mix it all up. And get ready to enjoy!
Serve with Crackers or on a slice of bread. YUMMY!!!!
- 1 large Avocado
- 1 1/2 C. diced cooked Chicken
- 1/4 C. Mayo
- 2 Tbsp chopped fresh Cilantro
- 1 Tsp Lime Juice
- Salt & Pepper
- Mash avocado and mayo together in a bowl. Add chicken, cilantro, lime juice, and salt & pepper to taste. Mix well. Serve with crackers or slices of bread.

This recipe was REALLY good, but just a little too salty for our tastes. We will definitely make it again, but with low-sodium soy sauce this time!
