It has been one of those weeks where the “mommy brain” has been bad. I mean real bad. This is how bad it was… I tried to use NAIL POLISH REMOVER to remove my eye makeup instead of eye makeup remover!!!! Both bottles are blue and apparently I can’t read. Aaahhhh!!! Thankfully my eye is okay. Obviously, I realized mistake very quickly and since my eye was closed I didn’t get very much in my eye. But seriously…. Who does that???? Moms. Moms who are very tired and their brains are on shut down mode. Oh well. It happens. And my amazing husband made sure that I was able to go wedding dress shopping with my little sister. And I can’t tell how much that helped clear my head of “mommy brain.” (Thank you, dear husband!)
Baking helps me clear my head. And baking is something I can’t help but want to do on dark and dreary days, like the ones we have been having recently. Of course, since it’s fall, and so very close to Thanksgiving (Less than TWO weeks! AH!) I want pumpkin and cinnamon. Today’s creation… Pumpkin Banana Bread! And let me just express to you how amazing and addicting and wonderful this bread is. It is moist and full of just the right spices.
This bread is a quick bread. It takes very little time to whip up and get in the oven. Once the bread is in the oven, your house will smell warm, and spice-y, cinnamon-y and inviting. It’s just lovely I tell you, Just lovely!
I kept this recipe simple and pure to the spices and banana and pumpkin flavors. Of course, I could have added chocolate chips (which is a nice option for a chocolate craving) or a fancy glaze or icing. But in the end, I decided that I wanted the spice of cinnamon, cloves, nutmeg and ginger to shine through in a moist pumpkin-banana flavor. It really is perfection.
You really need to make this delicious bread! My 3 year old boys are calling it Punkin-cake. Hehehe… The twin girls love it too. Although, they can’t talk, they did come running uncross the room when they saw me eating some.
- 3 very ripe Bananas, mashed
- 15 oz can Pumpkin puree (not pumpkin pie filling)
- 4 Eggs
- 1 cup Brown Sugar
- 3/4 cup Granulated Sugar
- 1/2 cup melted Butter
- 1/2 cup Vegetable Oil
- 1 1/2 tsp Vanilla
- 4 cups Flour
- 1 tsp Salt
- 1 tbsp Cinnamon
- 1 tsp Cloves
- 1 tsp Nutmeg
- 3/4 tsp Ginger
- 2 tsp Baking Powder
- 2 tsp Baking Soda
- **optional** Powder Sugar for serving
- In a stand mixer combine bananas, pumpkin, eggs, sugars, butter, oil and vanilla.
- Mix until well combined.
- Add remaining dry ingredients.
- Mix on low until just combined. (do not over mix)
- Pour into two greased 9x5 loaf pans.
- Bake at 350˚ for 60 minutes or until toothpick inserted into center of bread comes out clean.
- Sprinkle with powdered sugar before serving.
