My husband is a big fan of Mexican food. Literally, we can eat it two or three times a week and that is OKAY by him. The kids of course, are big fans too. (Not too hot. But they love a good mild salsa.) The best part of Mexican food is the fresh salsas and Pico de Gallo. Your taco is just not complete without a good topping of tomato salsa.
I love the summertime when there is an abundance of fresh veggies to turn into amazing and delightful salsas. But I am very thankful to whomever invented the hot house and allowed us to have fresh veggies all year long. This chunky salsa makes me feel like winter is not quite as bad and summer will be here soon every time I eat it. Chunky salsas are versatile and customizable to your own taste, which is another reason why I love it!
- 5 Roma Tomatoes, diced
- 1/2 cup chopped Green Bell Pepper
- 1 Jalapeno, finely diced
- 1 tsp diced Garlic
- 1/2 cup Onion, finely diced
- 1 tsp Lime Juice
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/2 cup chopped Cilantro
- Combine all ingredients into a medium bowl.
- Allow to salsa to sit for at least 10 minutes to bring flavors together.
- Serve and Enjoy!

You can totally leave out the onions! That is why I love making homemade salsas. So customizable.
