How do you feel about side dishes? Do you change them up often? Or do you have the same as usual rotation? I have been a little bored with the normal side dishes we usually rotate through the week. Buttered pasta, rice, mashed potatoes, canned green beans, etc… same old, same old. And although the kids still love them, I have been looking for new and easy side dishes to switch things up at dinner time.
My husband loves mushrooms. He has made me fall in love with mushrooms. And now our kids love mushrooms! He requested more mushrooms for dinner during the week. I found a 20 oz package for a really cheap price at Costco last week and knew I had to come up with an easy, but super yummy way to prepare them.
I have a really yummy stuffed mushroom recipe which is a family favorite, but that takes a little more time than I wanted to spend on a side dish for a weeknight dinner. Last time I made those mushrooms was Christmas Day… Only no one ate them… Because I FORGOT them in the oven until late that night! HAHAHAHA!!! I kept thinking the whole meal that I was missing something. Oh well.
Mushrooms are also one of my favorite things to stuff into chicken. Roasted red pepper mushroom stuffed chicken is another family favorite.
This roasted mushrooms side dish requires very little prep, very few ingredients, and is as simple as putting a pan in the oven. They were over the top delicious!
INGREDIENTS:
- 20 oz Baby Portobella Mushrooms
- 5 tbsp butter
- 1 tsp Garlic Powder
- 1 tsp dried Rosemary
- Salt & Pepper
- 1 tbsp Olive Oil
DIRECTIONS:
- Preheat oven to 400˚ and place cast iron skillet in oven to heat.
- Remove stems from mushrooms..
- Melt butter and stir in garlic powder, rosemary, salt & pepper.
- Pull out hot skillet from oven and spread olive oil on the bottom of a cast iron skillet. (or other oven safe pan)
- Place mushrooms cap side down in oil
- Drizzle butter mixture over the inside of each mushroom cap.
- Roast in oven for 25-30 minutes or until mushrooms are tender.
***Note: Sprinkle with grated parmesan cheese for an extra layer of flavor
We were super happy with how these mushrooms turned out. And I am planning on adding them to my weekly side dish rotation. My oldest was quite upset that he didn’t get to eat the last one. We do have a “Last” bite war currently going on at our family dinner table… Not sure that this war will ever end. But at least they love veggies!

I am not a fan of mushrooms, but I know garlic makes almost everything taste delicious. My daughter told me that maybe I don’t like them because I don’t know how to cook them properly. So maybe I will give this recipe a try!
