I can hardly believe we are already back in school and getting into the routines of early wake ups, good breakfasts, protein packed lunches, homework and busy schedules! Summer has flown by so quickly. We had a lot of big events in our family which made summer go by even more quickly. But I am happy that school is here. My big boys just love school and were excited to meet new friends. Justin and Jordan start preschool next week and I think they are going to just thrive!
Back to school means meal planning has to come out in full force. I need quick and protein packed meals for my boys. If they don’t have protein they are hungry 10 minutes after the meal is over! (Nothing makes me more crazy then hearing, “Mom, I’m hungry.” while I am washing the dishes from the meal we JUST HAD!)
Breakfast before school is easy as pie with Jimmy DeanĀ® Frozen Croissants Sausage Egg Cheese which are made with real eggs, cheese and sausage and is a complete and satisfying breakfast! The big boys can heat them up themselves. They are ready to eat in 3 minutes or less and they are gobbled up before I even finish my coffee!
Lunch is all about thinking ahead, quick and easy, and high protein. The younger four kids have a love affair with veggies. I wanted to capitalize on that love of veggies and incorporate a protein boost for them at lunch. I am stocked up for the week after my trip to Meijer with Jimmy Dean Frozen Croissants, Tyson Chicken Nuggets, and Hillshire Farm Naturals- Slow Roasted Turkey sandwich meat for all my high protein quick and easy meals and school lunches.

I knew the whole family would love it in their salads too! If you have never tried a layered salad for your own lunch, you NEED to! Pack the salad to-go in a mason jar or clear plastic container for lunch or serve at home for a quick lunch in a large glass bowl. The colors of the layered salad are so beautiful!
I love to serve this 9 Layer Salad with Tyson Chicken Nuggets. It’s a protein boost for the kids which as I mentioned before, is an absolute MUST to keep them full! I love that my kids gobble up veggies and this recipe is so easy to get on the table or in their lunchbox for lunch.
9 LAYER SALAD
INGREDIENTS:
- Lettuce
- Cucumbers
- Tomatoes
- Olives
- Red Bell Peppers
- Shredded Colby Jack Cheese
- Bacon
- Hillshire Farms Naturals Oven Roasted Turkey
- Garlic Sour Cream Dressing (recipe to below)
DIRECTIONS:
Chop vegetables into bit size pieces. Layer vegetables with lettuce on the bottom and dressing on top in one large, clear bowl or several smaller clear containers. Mix when ready to eat.
Garlic Sour Cream Dressing:
Mix together 1 cup sour cream, 1 cup mayonnaise, 1/2 tsp granulated garlic, & 1 tbsp sugar.
***The Garlic Sour Cream Dressing also makes an amazing dipping sauce for the Tyson Chicken Nuggets!!!!
