Can we talk about bananas?
They are a fabulous fruit. In fact, I would say that they are probably the MOST consumed fruit in my home. And we consume a LOT of fruit!
I love them because they are so economical. They come ready packaged in easy servings. The kids can help themselves (Well, almost all the kids… The girls still cannot be trusted! HA!). If they aren’t eaten right away or go bad quickly, no problem! We just turn them into a delicious treat for the whole family. Banana Oatmeal Chocolate Chip Cookies, Pumpkin Banana Bread, or even a Breakfast Ice Cream are just a few of our favorite things to do with bananas (Besides eat them, of course!)!!!
This is our usual banana situation on the counter…. Notice there isn’t enough room to hang all the bananas on the little fruit stand!
My husband almost threw away four bananas that turned black almost overnight! I had to give him a quick lesson on how important those over-ripe bananas actually are. He completely understood and ordered me to make him something with chocolate! This cake recipe is really a bread recipe/cake recipe. I went with cake, since all the kids dubbed it the best cake ever. (Although, I am not sure that they don’t believe whatever cake they are eating is the BEST. Cake. Ever!)
This cake whipped together in less than 10 minutes. I didn’t bother sifting the dry ingredients. I just dumped the ingredients in my amazing KitchenAid mixer one at a time, poured the batter into my Bundt Pan and slid it in the oven!
I had to work fast to get any pictures of this cake. It smelled AMAZING in the oven. And the kids practically tackled me when I turned it out onto the platter. The girls did get a good chunk out of the side when I wasn’t looking. Those Stinkers!
You definitely need to let some bananas go black and squishy soon so you can make this cake! You’re going to love it!
INGREDIENTS:
- 4 very ripe Bananas
- 1 cup Vegetable Oil
- 1 1/3 cup Sugar
- 1 1/2 tsp Vanilla
- 3 Eggs
- 2 2/3 cups Flour
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 1 tbsp ground Cinnamon
- 1 cup Chocolate Chips
- Powdered Sugar
DIRECTIONS:
- Smash bananas in a large mixing bowl or stand mixer until no large lumps remain.
- Add oil and sugar and cream together.
- Add eggs and vanilla and mix until well incorporated.
- Pour in flour, then baking soda, salt, and cinnamon.
- Mix until just incorporated.
- Stir in chocolate chips.
- Pour into greased Bundt Pan.
- Bake at 350Ëš for 40-45 minutes or until an inserted toothpick comes out clean.
- Allow to cool for 10 minutes and turn out cake onto platter.
- When cool to touch, dust cake with powdered sugar.
I will just confess now and admit that I will most likely eat this for breakfast and allow my children to consume a slice as well. Cake for breakfast? I am the most AWESOME MOM!!! (Wink. Wink)

I love the photos of your littles looking at the cake. I know they want to jump in and have a big piece. They are being so patient. I love making banana bread. I have never tried banana cake – I will have t though. I happen to have some ripe bananas calling out to be made into a cake.
