It’s that wonderful season again in our house… The season of FOOTBALL!!!
We take Game Day seriously in our home! Every weekend we plan to relax as a family watching the game, laughing, playing together and eating really, really good food!
With a quick trip to Walmart and a couple of Old El Paso Taco boats and shells and refried beans, I have everything for an amazing fun and relaxing weekend! Because, WHAT is a Game Day without a spread of amazing food???
There is something about the crisp fall weather that makes us all want to get outside and toss around the ol’ pigskin. Daddy has been teaching the boys the fine art of catching, throwing and tackling. They all LOVE it! Even the girls want to get in on the action.
Jon has set up a TV outside under our covered patio with a speaker system so we can have the game on while we play our own game! It is quite ingenious! Jon will try to get the kids to mimic the play that just happened in the game. It’s hilarious!
Of course, every time we play football the boys get the ingenious idea and come up with a plan to tackle daddy. They think that they can take on their daddy… Today was not that day. It may be a while before they will be able to gang up and tackle their big daddy! HA!
We certainly have the sweetest and most adorable ball-girls. They will run after any stray ball and find new ones for daddy to play with.
Playing together and watching football works up quite the appetite! I make sure that I have a big spread of really yummy food ready to eat. But it has to be EASY! My go to is Mexican cuisine. Old El Paso makes it easy for me and everyone loves TACOS!!!!
Shredded beef tacos with Old El Paso refried beans, cheese, lettuce, tomatoes, sour cream and a fresh squeeze of lime piled into an Old El Paso boat is what’s for dinner! I love the Old El Paso boats and shells. They stand up so nicely. The kids can really hold on to them without their tacos falling over or cracking. These shells are made for my family!
I do have to tell you that Jimmy polished off 4 tacos by himself!!!
We have to finish off the night with a dessert! Dessert doesn’t have to be complicated. But it can be LOTS of fun! The kids helped me make “Fried” ice cream with fruit salsa in a Crispy Cinnamon Bowl. The bowls were so easy. Just brush Old El Paso Soft Tortilla Taco boats with oil and sprinkle with cinnamon and sugar and bake for a few minutes. They are the perfect vessel for ice cream.
INGREDIENTS:
- Vanilla Ice Cream
- Frosted cornflake Cereal
- Old El Paso Soft Tortilla Taco Boats
- 2 Tbsp Canola or Vegetable Oil
- 2 Tbsp Ground Cinnamon
- 2 Tbsp Sugar
- 1/2 lb Strawberries
- 1 Granny Smith Apple
- 1 cup Diced Cantaloupe
- 1/2 cup Shredded Coconut
- 1/4 cup Strawberry Jam
- 1 1/2 tbsp Sugar
- 2 cups frosted cornflake cereal
- Whipped Cream
DIRECTIONS:
- Scoop ice cream into balls and place on a cookie sheet.
- Freeze for 30 minutes
- Brush taco boats with oil inside and out. Sprinkle with cinnamon and sugar.
- Bake taco boats for 6-8 minutes at 350Ëš or until crispy.
- In a medium bowl, combine strawberries, apple, cantaloupe, coconut, jam and sugar.
- Crush cereal in a plastic bag.
- Roll frozen ice cream balls in cereal. Press the cereal into the ice cream creating a thorough coating.
- Build your fried ice cream boat with fruit salsa and whipped cream to top!

Ha! Who knew fried ice cream wasn’t really fried? We used to eat at a restaurant in Indiana that had the best fried ice creams and sopapillas. I loved it.

When I see taco shells at the store I don’t usually think dessert! But I do now! Yummy! 🙂
