How are you all enjoying Pumpkin Spice season? I know we are very close to Christmas & Holly Season, but I plan on getting everything I can out of Fall this year! Pumpkins come out in full force for Halloween, but they carry over through Thanksgiving so nicely.
I cannot tell you how much my entire family is looking forward to Pumpkin Pie in a few weeks! But while we wait, I made these AMAZING Pumpkin Snickerdoodles!
These Pumpkin Snickerdoodles were so simple to make and the kids just devoured them! They were the perfect treat for Halloween weekend.
Speaking of Halloween…You don’t mind if I show off my children do you???
The twins were Anna and Elsa!!! They were so adorable! However they were so excited they couldn’t smile! Hahahaha! Seriously, that is what they do. They get so overwhelmed they can barely crack a happy face. They were, by the end of the night completely covered in chocolate and sticky candies. Good thing their costumes are washable!
Jordan and Justin both are in love with Star Wars. In the end, they both decided to be Storm Troopers. Their costumes are slightly different. And they know EXACTLY whose is whose!
Jimmy was Captain America, since watching the new Captain America movie he is officially a fan! And Jayden wore his Air Force uniform. His Uncle Ben recently joined the Air National Guard and Jayden is ALL about being a solder right now!
One should note that there is an extra boy in this fabulous picture! Our new neighbor “Best Friend” is Iron Man!
Okay. Now back to your regularly scheduled recipe….
- 3 1/4 cups Flour
- 3 1/2 tsp Cornstarch
- 1 tsp Cream of Tartar
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 2/3 tsp Salt
- 1 Tbsp ground Cinnamon
- 1/2 tsp ground Ginger
- 1/4 tsp ground Nutmeg
- 1/4 tsp ground Allspice
- 1 cup granulated Sugar
- 3/4 cup packed Brown Sugar
- 1 cup Butter, softened
- 1 large Egg
- 3/4 cup Pumpkin Puree
- 1 1/2 tsp Vanilla Extract
- 1 1/2 tsp Cinnamon
- 1/4 cup Sugar
- In a medium mixing bowl, whisk together flour, cornstarch, cream of tarter, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, & allspice removing all lumps.
- In a separate bowl beat sugar, brown sugar, and butter until combined.
- Whisk in egg, pumpkin puree, and vanilla.
- Slowly add dry ingredients to wet ingredients a cup at a time until well incorporated.
- Refrigerate dough for 2-24 hours.
- Scoop out dough and roll into 1 inch balls.
- Roll balls in cinnamon & sugar.
- Bake at 350Ëš F for 11-13 minutes.
