The holidays are HERE!!! Can you believe it? I am astonished at how quickly the year has flown by! I am excited for all the tradition the holidays bring, but I am also very thrilled to be starting new traditions and giving old ones new twists as this is our first Christmas an official family of eight and we recently moved to Texas! Old traditions are wonderful, but making your own is also exciting and fun.
And who knows… Maybe the new tradition will one day be the “old” tradition?!
Since we are in Texas I decided to give a Latin flair to one of our traditional holiday meals of Salmon. Since we are in Texas we are loving the hispanic influence of flavors all around us! When I don’t have the kids I spend my quiet moments walking down the isles of La Michocana for inspiration. I was inspired by La Morena® Chipotle Peppers in Adobo and La Morena® Sliced Jalapeños to make a Garlic Chipotle Salmon with Mango Pickled Jalapeño Salsa to add a twist to our traditional Salmon meal for the holidays!

The entire family loves salmon! The girls call it “fishy.” It’s pretty much adorable when they tell me, “More fishy, please.”
The salmon is marinated in a garlic chipotle sauce and baked in the oven. And if you have never made homemade salsa before, this Mango Salsa is PERFECT for you to try! It is really quite easy. You may never go back to store bought salsa again!
The La Morena® Chipotle Peppers in Adobo are so delicious. I have used them before in a shredded pork recipe. I knew they would be amazing in this recipe. La Morena® peppers are high quality. I trust that whatever recipe I use them in will turn out delicious and be a new family favorite!
A quick tip if you are worried about this dish being too spicy. Marinate the salmon for less time and the spicy flavor will not penetrate the entire fish. If you like spicy, marinate longer.
The mango will help soften the spice of the salsa too. Add more mango if you prefer your salsa with a sweet kick! I love the ease of using canned La Morena® Sliced Jalapeños in my salsa. It makes my life so much easier!!! Not to mention, the pickled flavor is AMAZING!


- 7 oz. can La Morena® Chipotle Peppers in Adobo
- 1 tbsp Garlic, diced
- 2 tbsp Lime Juice
- 1/4 tsp Black Pepper
- 1/4 tsp Salt
- 2 tbsp fresh Cilantro
- 2-4 lbs of Salmon (based on crowd serving)
- 1/2 cup La Morena® Sliced Jalapeños
- 2 cloves Garlic
- 1-2 ripe Mango, peeled & diced
- 2 15 oz cans petite diced Tomatoes
- 1/4 cup diced Green Bell Pepper
- 1/4 cup diced Onion
- 2 tbsp Lime Juice
- 1/4 cup fresh Cilantro
- Salt & Pepper to taste
- In a blender or food processor pulse chipotles, garlic, lime juice, cilantro and salt & pepper to make a paste.
- Place salmon on greased baking sheet.
- Spread chipotle marinade on both sides of salmon.
- Allow salmon to marinate at least 15 minutes. (for a spicier flavor allow 30-45 minutes.)
- Bake at 375˚ F for 20-25 minutes or until salmon flakes.
- In a blender, pulse all ingredients until all ingredients are approximately the same size and well blended.
- Allow Salsa to sit for a few minutes for flavors to join together.
- Serve Salmon with a generous helping of salsa over the top.

I love this spin on salmon. It’s harder to get my kids to eat seafood (despite living on an island – LOL) but I think this might get them going. Happy Holidays!
