If you have a Nutri Ninja Ninja BlendMax DUO with Auto-iQ Boost you NEED to try this easy, blender Roasted Tomato Soup!
Every morning Jimmy (7 years old) asks me if we can make smoothies for breakfast. Every. Single. Morning! But blender broke a few weeks ago, and he was just so sad….
When I unboxed the Nutri Ninja Ninja BlendMax DUO I am pretty sure Jimmy and I both did a happy dance! He was excited to be able to make smoothies again, but I was excited about “All The Things” this Ninja Blender can do!
This bad boy has total crushing power! The 1600-watt motor base with Auto-iQ Boost means that there is nothing this blender can’t power through.
I love the 88 oz. Total Crushing Pitcher that allows me to make a giant batch of smoothies at a time or blend a beautifully smooth soup.
I have also ground my own oatmeal flour using the Nutri Ninja Ninja BlendMax DUO. It’s amazing how much power is in this machine.
The Auto-iQ Boost takes out all the guess work for those new to the blender world.
If you are working in smaller batches, the two 24 oz Tritan Nutri Ninja cups are perfect to fully break down any ingredient.
Best part of all…. Every piece is dishwasher safe! Can I get an “AMEN?”
I am in love with tomato soup. It is definitely a comfort food for me. This Roasted Tomato Soup was the very first thing I wanted to make in the Ninja BlendMax.
Take advantage of the fresh tomatoes everyone still seems to have a crazy abundance of and roast those babies for some intense flavors!
The fresh basil from my yard gave a truly decadent flavor in the soup and I finished it off with a quick addition of sour cream for a bit of creaminess.
There was no standing in front of the stove for this soup. Simply slice your tomatoes in half, roast, blend and serve! It’s so easy. The Nutri Ninja Ninja BlendMax DUO did all the work and my soup was so smooth.
- 14-16 Roma Tomatoes
- 1-2 tbsp Extra Virgin Olive Oil
- 1 tsp Salt
- 1/2 tsp ground Black Pepper
- 1/2 cup Roasted Red Pepper
- 1 cup Chicken Stock
- 1/2 cup Fresh Basil Leaves
- 1 tbsp Garlic
- 1/4 cup Sour Cream
- Slice tomatoes in half and place on baking sheet.
- Drizzle with olive oil and salt & pepper; toss to coat.
- Turn all tomatoes cut side up.
- Roast in 375˚ for 25-35 minutes or until tomatoes are soft and caramelized.
- Scoop hot, roasted tomatoes directly into Nutri Ninja pitcher.
- Add roasted red pepper, chicken stock, basil leaves, & Garlic.
- Blend until very smooth.
- Add sour cream blend.
- Serve right away!
I was literally in HEAVEN at first bite!!!! I dipped fresh baked bread into the soup and everything was perfect in the world.
If you don’t have a blender on your counter… Add this Nutri Ninja Ninja BlendMax DUO to your Christmas wish list NOW!!!
Happy Eating,
Keikilani

Totally going to have to make this soup and pair it with a grill cheese sandwich.
Now that it’s getting chillier outside this is the perfect dish to make on a week night.

I love that this blender has both the large jar and the small containers for smoothies. We have a separate blenders and this would take so much less room. I also have to try your roasted soup as fresh tomato soup is great with grilled cheese.

Tomato soup is my absolute fave, but I’ve never made it myself. I usually just buy it in tins! This looks quite simple to make though, so I might just have to give it a try 🙂
