School is back in session and we are working at getting back into our routine. That means I need to start meal planning quick and easy meals for school nights!
Can we all just pause a minute in disbelief that summer is at an end and a new school year has begun??? Seriously, this is crazy!
When I make my menu for the week I like to create a variety of flavors from around the world. The same two meals every other night just gets boring.
I just discovered Bibigo and all their Korean inspired foods at H-E-B!!! I grew up on amazing Korean foods in Hawaii and am determined to get my family hooked on delicious Asian food like I am. Check out the frozen snack isle to find our new favorite Bibigo Mini Wontons Chicken and Vegetable (which, by the way, make a delicious late night snack!) or Bibigo Steamed Dumplings.
If you have leftover chicken from Sunday dinner, then you MUST add this recipe to your weekly menu! Quick and Easy Chicken Chow Mein with Bibigo Mini Wontons is just to DIE for. Better than take-out for sure!
Chop up some carrots, celery, and onions and throw them in a skillet to sauté while your water boils for some pasta.
Dice up your leftover chicken. We had a whole chicken on Sunday, so it was easy to just pick off the meat for this meal.
Once your veggies have softened, add the diced chicken and some sliced cabbage to the hot skillet.
The key to Asian flavored dishes is Sesame Seed Oil. You can tell when it’s missing. The oil just takes the dish to the next level. It doesn’t take much take the flavors up a notch, so a small bottle will last quite a while.
Add in cooked spaghetti or vermicelli noodles and toss with soy sauce.
Serve the noodles with Bibigo Mini Wontons and Bibigo Steamed Dumplings to round out your meal with extra protein. This dinner is a hit with the whole family and the mini wontons makes our dinner complete.
If you served this meal in styrofoam bento boxes, no one in your family would know it wasn’t take-out! My kids just gobbled everything up and my husband was impressed.
INGREDIENTS:
- 2 Cups diced cooked Chicken
- 1 small Onion, sliced
- 2 stalks Celery, sliced
- 2-3 Carrots, julienned
- 1 Cup chopped Cabbage
- 2 tbsp Sesame Seed Oil
- 1/4 Cup Soy Sauce
- 12 oz Spaghetti Pasta, cooked al dente
- Bibigo Mini Wontons
DIRECTIONS:
- Saute onions, celery & carrots in large skillet.
- Add chicken, cabbage, & sesame seed oil, stir to coat.
- Add cooked spaghetti and soy sauce.
- Toss until well combined and hot.
- Serve with Bibigo Mini Wontons
