Having older siblings is hard when you get left behind because you are too little to go! The twins were really sad they couldn’t go with Dad and the boys on a big kid adventure, so I decided to create a fun Saturday morning breakfast of Cinnamon Apple Eggo Waffle Stacks with Reddi-Wip.
The girls literally jumped up and down when I told them we were going to have our special breakfast together, AND eat it in the living room while watching their favorite show.
We rarely allow the kids to eat in the living room. I have learned a way to protect my rug when I do! I lay down a plastic table cloth and we eat on the rug picnic style or in this case with just the two girls, I brought down their little table and chairs that normally hold all their little tea parties in the playroom.
The girls insisted our breakfast include apples and hay since horses eat apples and hay. They were so happy to help me make Cinnamon Apples on the stovetop. This recipe is so simple and it also creates the “syrup” for the waffles. It really tastes like apple pie filling.
Stovetop Cinnamon Apples
Ingredients
- 5 med Apples any firm variety (we used Fuji)
- 1/2 cup Brown Sugar
- 2 tsp Cinnamon
- 1/8 tsp Salt
- 2 tbsp Apple Juice
Instructions
- Peel & core apples and cut into small pieces *bite size chunks
- Add all ingredients to a saucepan or skillet, mix thoroughly, and turn on stove to medium heat
- Allow apples to cook for 10-15 minutes stirring occasionally to keep them from burning.
- When apples are fork tender and sauce is thickened your apples are done.
We used Eggo Waffles as our “Hay” in our breakfast. We love Eggo waffles anytime. they are warm, fluffy and delicious and toast up to a delicious golden crisp in just minutes. This was an easy part for the girls to help out with. They got out the toaster and put in the waffles.
The girls were excited to top their Cinnamon Apple Waffles with Reddi-Wip. They love, LOVE, LOVE Reddi-Wip! I love that they use dairy cream in their original flavors and use less hydrogenated oils than other frozen whipped toppings. I usually buy a can of Reddi-Wip when I do my monthly shopping at Walmart. We have to keep our favorites stocked in the fridge!
I think it’s safe to say the whole morning with the three of us was a huge success! They can’t wait to do it again. Creating special moments like this are some of my favorites moments as a mom.
