We are in full Soccer life mode now. Which means I need easy meals that can sometimes be packed for On-the-Go eating. Hidden Valley Ranch Seasoning Shaker is one of my secret weapons to creating quick and flavorful meals and snacks.
Our newest favorite On-the-Go dinners is Bacon Ranch Chicken Salad. This chicken salad can be made in less than 15 minutes and eaten several different ways.
Turn the chicken salad into a sandwich, eat with crackers, in a taco, or on top of a bed of lettuce. I usually let the kids choose which way they want to eat it or pack small containers of the salad with a bag of crackers to let them eat a picnic dinner while watching their siblings practice soccer at the field.
I almost always have leftover chicken in our fridge. We love a simply seasoned, baked ranch chicken is perfect for shredding and adding to this recipe. Fry up a few slices of bacon, chop up celery, and shred your chicken and dinner is just seconds away from being on the table or packed up for soccer practice.
I store the Hidden Valley Ranch Seasoning Shaker at kid level so they can use it to sprinkle on their popcorn, on pizza, top off their salad and more. The kids love this seasoning on just about everything.
Bacon Ranch Chicken Salad
Ingredients
- 2 cups cooked chicken shredded
- 1/2 cup celery diced
- 4-5 slices Bacon crumbled
- 2 tbsp Hidden Valley Ranch Seasoning Shaker
- 1 cup Mayo
Instructions
- Combine all ingredients in a medium bowl.
- Serve with crackers, in a sandwich or tortilla shell
This season of busy weeks with 3 soccer practices and 3 games every week, plus our normal busy schedule can be chaotic, but having recipes in my back pocket like this Bacon Ranch Chicken Salad is how we survive the chaos.
