Cinco de Mayo is just around the corner and I am ready to make all the delicious, but easy Cinco de Mayo recipes that I possibly can for our family.
We are all a little, okay, A LOT obsessed with Mexican food. Tacos are a staple in our home and we are always trying new recipes, flavor combos, and things to eat with Tortilla Chips.
This is a collection of some of my favorite dishes that I make year round and on Cinco de May because they are such easy recipes.
The kids often eat chips and salsa when they get home from school. We are going to start out the week with a large batch of Homemade Restaurant Salsa. This salsa is easy to whip up in a blender and can be made mild or spicy very easily.
No Cinco de Mayo spread would be complete without a queso dip. I made this Venison Queso Dip for one of the big football games we watched this February and my husband and his guests went crazy over it. I know he won’t complain if I add this recipe to the menu this week!
If you are in the mood for tacos, but won’t be home for most of the day, pull out your crockpot and make these Pork Carnitas which are slightly lighter and healthier than the usual recipe. We love the flavors of this Pork Carnitas Taco so much. Careful… You can eat a lot of them!
Top your tacos with an easy Pico de Gallo or as my kids say a chunky salsa. There is something about fresh ingredients on Mexican food that just takes it to the next level.
In the mood for some fish? Our favorite salmon recipe is this Chili-Lime Salmon that is topped with a pickled jalapeƱos pico. I make half of the recipe spicy and the other half mild for the kids.
Why stop now? Pull out chicken thighs from the freezer and make this Spicy Chili Lime Skillet Chicken that gives you lots of flavor without lots of dishes. Serve with some rice and pinto beans.
Green Chili Chicken Taco Boats are an easy way to serve a crowd and keep a loaded taco from falling over! This filling is a perfect way to use a rotisserie chicken and cut your cooking time in half.
No Cinco de Mayo celebration would be complete without dessert! These easy Cinco de Mayo recipes for dessert are the perfect ending to your feast!
Cinco de Mayo Fiesta Cupcakes from BreePair.com have me drooling at my computer screen. You can’t go wrong with cupcakes and the vibrant colors of her frosting is just brilliant and beautiful.
If you are craving something cool and refreshing to take the heat from your spicy meal out of your mouth, try Faux Fried Ice Cream with Fruit Salsa in a crisp Cinnamon Taco Bowl. My children love this dessert and love when I let them build their own dessert adding as much fruit salsa and whipped cream as they can possibly heap on!
