‘Tis the season to be making all things Ginger-spiced. What is it about the holidays that make me want to create all the ginger spice recipes? Whatever it is, it is what led me to create this Banana Gingerbread.
There is always a bunch of bananas in our fruit bowl on the counter. My hope is, if the kids can see the fruit, they will eat the fruit. This tactic is mostly successful, unless I buy too many fruit options in which case our banana bunches turn dark brown.
But this does not make me sad. No indeed.
This makes me VERY happy! Because some of my favorite baked good are made with bananas.
I combined my love of banana bread and gingerbread to create this Banana Gingerbread recipe.
I like using I Can’t Believe It’s Not Butter in this recipe because it is a plant-based oil butter, made with good fats (like omega-3), no artificial flavors or preservatives, and 0g of trans fat per serving. Best of both world in this recipe: rich taste with good fats!

While I am writing this post, I am actually baking up another batch of the Banana Gingerbread and I wish you could smell all of the spices! I would even share a slice with you if you were to come over right now!
Oh. And this recipe makes 2 loaves. If you don’t have a family with 6,000 children to feed, you can freeze the second loaf for another day. They freezer really well wrapped in plastic wrap and then tinfoil.
Ingredients
- 4 ripe Bananas
- 1 cup I Can’t Believe It’s Not Butter
- 2 cups Brown Sugar
- 2 Eggs
- 2/3 cup Molasses
- 4 cups Flour
- 3/4 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1 tsp Ground Ginger
- 1/2 tsp Cloves
- 2 tsp Cinnamon
- 2/3 tsp Salt
Instructions
- Mix together banana, I Can’t Believe It’s Not Butter and Brown Sugar in a large bowl until well combined.
- Add in one egg at a time, mixing in each time.
- Add molasses to mixture and stir until well combined.
- In a separate bowl, add flour, baking soda, baking powder, salt, ground ginger, cloves, and cinnamon. Use a whisk to distribute spices in flour.
- Slowly pour the flour mixture into the wet ingredients stirring as your pour.
- Grease two standard loaf size pans and distribute batter evenly between the two pans.
- Bake at 350˚ F for 40-45 minutes or until a toothpick inserted in the middle comes out clean.

The kids gobbled up the first batch in 2.3 seconds. I think it is safe to say it is “Kid Approved.”

The recipe is easy to follow. I really don’t have much success with baking bread but this one is a must try for me. I love banana gingerbread, so I should try making my own instead of buying it from a bake shop.
