For a quick, high protein lunch, I pair a LALA® Yogurt Smoothie with my favorite Cranberry Apple Chicken Salad. It is so easy to make and I keep it low carb by serving it on sliced apples.
This recipe is great for using up leftover chicken from dinner last night!
TIP: To shred cooked chicken quickly, toss it into your stand mixer and turn it on low. You won’t believe how fast it shreds the chicken!
You can add nuts, such as pecans, to this recipe for even more protein and crunch. I am not a fan of nuts, so I leave them out.
Ingredients
- 2 cups Chicken, cooked & shredded
- 1/2 cup dried Cranberries
- 1/2 cup diced Apple
- 1/4 cup diced Celery
- 2 tsp Dijon Mustard
- 1 tbsp Mayo
- 1/4 cup Plain Greek Yogurt
- 1 tsp Onion Powder
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- optional 1/2 cup chopped pecans or walnuts
Instructions
- Combine all ingredients into a medium size bowl.
- Taste and add more salt or pepper if desired
- Serve on slices of apples for a low carb option
